My Top 10 Pot Luck Recipes



Well, it is that time of year again; Christmas Dinners, Christmas Parties, and New Years. At least once during this season we will be ask to a Pot-Luck, but what to take? Here are my top 10 tried and true recipes I go to. I hope this helps some of you out there. Enjoy the Holiday season.




 
Desserts:

Apple-Cranberry Crisp:
Ingredients:

2 cans Apple Pie Filling
1 can Cranberry sauce (whole berry, not jelled)
1/2 cup Apple Cider
1 cup Golden Raisins
1 package Oatmeal Cookie mix
1 Stick Butter (softened)

Directions:

Mix filling, sauce, cider, and raisins together in mixing bowl. Pour in baking dish. Mix together cookie mix and butter; sprinkle over top of mixture. Bake 350 degrees for 30-35 minutes. Serves 8-10.

Banana Pudding with a Pineapple Twist:
Ingredients:

2 Large package French Vanilla Instant Pudding mixes or 1 large box French Vanilla Pudding mix and 2 small boxes Banana Pudding Mix. Make according to directions on package.
1 Box Vanilla Wafer Cookies
5-6 Ripe Bananas (Firm)
2 cans Crushed Pineapple (well drained)
Whole milk to make pudding
1 Large container Whipped Topping (I use Cool Whip)

Directions:

Make pudding according to directions; leave in frig until needed. In a 9 by 13 dish begin to layer with cookies; next layer sliced bananas; next layer pineapple; next layer pudding. Continue doing this until pudding is gone. Top with whipped topping. Leave in frig until time to serve it. Makes 10-12 servings.


Double Chocolate Brownies (diabetic recipe from Mr. Food):
Ingredients:

2/3 cup all-purpose flour
2/3 cup sugar
1/2 cup unsweetened cocoa
1/4 cup (1/2 stick) butter, melted
2 tablespoons water
1 tablespoon vanilla extract
1/2 teaspoon baking powder
1/3 cup egg substitute
1/4 cup fat-free hot fudge sauce, warmed

Directions:

Preheat oven to 350 degree F. Coat an 8-inch square baking dish with cooking spray.
 
In a large bowl, combine all ingredients except fudge sauce; mix well then spread half the batter in prepared baking dish. Top with hot fudge sauce then spread remaining batter over sauce.
 
Bake 25 to 30 minutes, or until a toothpick inserted in center comes out clean. Cool completely then cut into squares and serve.


Side Dishes:


Sweet Potato Casserole:
Ingredients:

3 cups cooked sweet potatoes or 2 (29oz.) cans. Drained.
1 cup sugar
2 large eggs
1 tsp. Vanilla extract
1/3 cup Milk
1/2 cup Butter= 1 whole stick

Topping:

1 cup packed brown sugar
1/3 cup flour
1/3 cup butter
1 cup chopped nuts

Directions:

Preheat oven 350 degrees. Mix sweet potato ingredients together (mash up potatoes). Once everything is well mixed together make the topping and add to top of the potato mixture. Bake for 30-35 minutes. Let cool before serving.
Serves about 12 people.

Corn Casserole:
Ingredients:


1 box corn muffin mix (Jiffy)
2 eggs slightly beaten
1 stick butter melted
1 8oz. container sour cream
1 can kernal corn not drained
1 can cream corn

Preheat oven 350 degrees. Mix all ingredients together in mixing bowl. Pour into baking dish; bake for 55 minutes to 1 hour 5 minutes. Cool for at least 15 minutes before serving.

Baked Beans with a Pineapple Surprise:
Ingredients:

1 lb. Bacon diced
1 Large Onion, chopped
3 cans (two 55 ounces, one 28 ounces) baked beans
2 cans (one 20 ounces, one 8 ounces) crushed pineapple, drained
½ cup packed Brown Sugar
½ cup Ketchup

Directions:

In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels. Drain; reserving 2 tablespoons drippings. Saute onion in drippings until tender.

In a very large bowl, combine the beans, pineapple, bacon and onion. Combine brown sugar and ketchup; stir into the bean mixture.

Transfer to two greased 3-qt. or 13-in. x 9-in. baking dishes. Cover and bake at 350° for 20 minutes. Uncover; bake 25-35 minutes longer or until bubbly and beans reach desired thickness. Yield: 25-30 servings.


Main Dish:

Ham with Green Beans and Red Potatoes:
Ingredients:

4 lb. Ham
3 lbs. Red Potatoes
2 small packages Frozen Green Beans
2 T. Brown Sugar
2 T. Italian Seasoning
salt and pepper to taste


Directions:

Turn slow cooker on High... Put in Ham, brown sugar, potatoes, green beans. Add seasonings to potatoes and beans... Cook at least 5 hours.

Salad:

BLT Macaroni Salad:
Ingredients:

2 cups uncooked Elbow Macaroni
5 Green Onions, finely chopped
1 Large Tomato, diced
1 ¼ cups diced Celery
1 ¼ cups Mayonnaise
5 teaspoons White Vinegar
¼ teaspoon Salt
¼ teaspoon Pepper
1 lb Bacon cooked and crumbles

Directions:

Cook macaroni according to package directions; drain and rinse in cold water. In a large bowl, combine the macaroni, green onions, tomato and celery.

In a small bowl, whisk the mayonnaise, vinegar, salt and pepper. Pour over macaroni mixture and toss to coat. Cover and refrigerate for at least 2 hours. Just before serving, add bacon. Yield: 12 servings.


Soups:

Vegetable Beef Soup:
Ingredients:

1 can Beef Broth
2-3 lbs. Stew Beef
1 Bay Leaf
1 package Onion Soup Mix
1 small can Tomato Sauce
1 large can Whole Tomatoes
1 bag Frozen Mixed Vegetables
1 bag Frozen Chopped Onions (1 med onion if fresh)
1 can Cream of Potato Soup

Directions:

Add ingredients to slow cooker and mix well. Cook on low 5-6 hours or high 4-5 hours.

Chili:
Ingredients:

1-2 lbs. Ground Round (or other ground beef or turkey or chicken)
1 large can pealed whole tomatoes
1 reg. can of tomatoes chili ready
1 small can tomato paste
1 package chili seasoning mix
1 16 oz. thick and chunky salsa (mild, med., or hot)
1 med. can chili beans
1/2 cup packed brown sugar
salt & pepper to taste

Directions:

Add ingredients to slow-cooker and mix well. Cook on low 8-10 hours or high 6-8 hours.
