Happy New Year with Hoppin' Johns



Tradition says that eating Hoppin’ Johns, collard greens and cornbread on New Year’s Day will bring the New Year filled with good luck; not to mention they are delish. This is also a great way to use leftover ham from Christmas Dinner and get in some great protein.

Here is a very simple recipe to follow; no soaking dried black-eyed peas over night.  




Hoppin’ Johns Recipe:

Ingredients:
  • 1 cup chopped onion
  • 1 tablespoon bacon drippings
  • 2 cans (about 16 ounces each) black-eyed peas; slightly drained
  • 1 cup chopped cooked ham
  • ¼ teaspoon ground cayenne pepper
  • 3 cups cooked rice
  • Salt and Pepper to taste
Directions:
·         In a large saucepan sauté chopped onion in bacon drippings until tender. Stir in black-eyed peas, ham, and cayenne pepper. Simmer for 10 minutes; stir in hot cooked rice and salt. Serve Hoppin’ John hot with sliced onion and cornbread.

Serves 4 to 6
